 This is basically a crustless quiche, packaged in my casserole pans.  Asparagus, caramelized onions,roasted tomatoes, mushrooms, mozzeralla, Parmesan and goat cheeses, free range eggs, and evaporated milk.  Serves 2- 4  $10.95  (Vegetarian, Gluten Free)


Tomato Basil Pie (Made with Fresh Basil)
Layered tomatoes, feta chese, Parmesan cheese, fresh basil, caramelized onions, olive oil, salt and pepper in a pastry pie crust.  This pie goes well with everything, good for lunch, dinner or parties!

Gypsy Soup

This is a nice, light soup that is good served for lunch along side the Asparagus and Roasted Tomato breakfast casserole.  Onions, sweet potatoes, garlic, celery, chickpeas, vegetable stock, tomatoes, and a combination of spices.  Serves 2  $9 / Qt.  (Vegan, Gluten Free)

 

Garlicky Spinach, Garbanzo Bean and Tahini Soup

This combination of vegetables and seasonings is very unusual, but extremely tasty!  Fresh Organic Spinach, onions, garlic, garbanzo beans, tahini, potatoes, cumin, coriander and just a little bit of cream (1/8 cup to a quart of soup). $9 / Qt.  Serves 2 - 4  This goes well with the Casseroles, Pimento Cheese Sandwiches, or the Hummus.(Vegan, Gluten Free)

Buddha's Diet Delight

I love this soup!  It is a meal in a bowl.  It's probably one of the healthiest soups I make.  Sugar peas, and/or asparagus, snowpeas, mushrooms, carrots,  baby corn, tofu, onions, scallions, rice noodles, vegetable broth, (no garlic).  $9/ Qt. Serves 2 - 4 (Vegan, Gluten Free)

Breakfast Quinoa (Yummy!!)

I know some of you missed this dish last week.  I made this dish for my Vegan Cooking Class and it was a huge hit.  Extremely healthy, serve with yogurt and you've got breakfast.  Organic Quinoa, honey, pumpkin seeds, pine nuts, roasted walnuts, cranberries and apricots.  (no onions) $7.99 lb. Potato Salad With Fresh Dill

Collard Greens Coleslaw

This dish is a perfect side to the chilis or soups I have listed this week.  A warm dressing is poured over the collard green mixture to slightly wilt the salad but not cooking it.  Collards, carrots, onions, red bell pepper. Dressing; rice vinegar, olive oil, mustard powder,

Vegetarian Shepherd's Pie 

My recipe for Sheperd's Pie is just as hearty as the traditional one minus the lamb.  Green lentils, mushrooms, caramelized onions, fennelcarrots, green peas, topped with mashed potatoes, milk, butter, salt and pepper.  Serves 2 - 4 $10.95 (Vegetarian, Gluten Free) (Vegan option is available)

 

Vegetarian Bolognaise Sauce served over Whole Wheat Spaghetti Pasta
I made this for dinner last week.  It is very good, the tempeh gives this dish the texture of meat.  Sun-dried tomatoes, onion, celery, carrots, red bell pepper, olive oil, zucchini, garlic, mushrooms, crushed tomatoes, diced tempeh, fresh basil, rosemary and oregano.  Serves 2, packaged in a 6x9 casserole pan. $10.95 (Vegetarian)

Organic Butternut Squash with Mushroom Sauce

Bianco Chili (Entree)

Bianco means "White" in Italian.  Bianco Chili is a chili made with white chili beans instead of dark red kidney beans.  Crushed tomatoes, squash, zucchini, sweet red bell peppers, green bell peppers, onions, (no garlic), carrots, TVP (Texturized Vegetable Protein, Soy based),  chili powder and spices.  Serve with Pimento Cheese sandwiches, the Mac and Cheese.  $9.50 Qt.  Serves 2 - 4  (Vegan, Gluten Free) 

Gluten Free Vegan Burgers

 

  Black Bean Burger Mix 

My black bean burgers are sold in a mix packaged in a pint container.  You can pat the burgers out to make the desired size.  Black beans, purple onions, green peppers, cilantro, serrano peppers, fresh lime juice.  Makes 4 burgers.  Roll in panko chips and fry 8 minutes on each side in a non stick skillet.  $7.99lb.  (Vegan and Gluten Free)

Honey Roasted Tofu over Quinoa Vegetable Pilaf and pumpkin seeds

 This has got to be my most favorite tofu we make.  The roasted pumpkin seeds give this dish a sweet, tangy crunch.  Organic tofu, roasted carrots, onions, red peppers, edamame beans, pumpkin seeds and organic quinoa.  This tofu entree is full of protein, I think you will like it as much as I do.  $11.95 serves 2 (Vegan and Gluten Free)

Sun-Dried Tomato and Kalamata Olive Spread (Appetizer or sauce for pasta)

This is a delicious spread for garlic toasted rounds, I use this as an appetizer for most of my parties.  It's made with sun-dried tomatoes, kalamata olives, olive oil, Parmesan cheese, feta cheese, and garlic.  Sold in 1/2 pint containers.  Freezes well.   (Vegetarian, Gluten Free) 


Vegetable Spread 

My vegetable spread can be used as a dip for chips or vegetables or as a spread for sandwiches.  Cream cheese, cucumbers, carrots, celery, red and green peppers, onions, salt and pepper.  $4.95 8oz. container (Vegetarian and Gluten Free)

 

 Homemade Pimento Cheese 
This is my grandmother's recipe.  We love it!  We discovered the pimento cheese is excellent warmed up as a dip.  It's made with extra sharp cheddar, cream cheese, duke's mayonnaise and pimentos.  This is a spread or a dip and goes well with the soups.  Packaged in pint containers.  

 

Traditional Hummus 
Organic Edamame beans, organic tahini, garlic, and lime juice.  Serve warm or cold on a platter with olive oil drizzled on top and roasted garlic.  Serve with pita wedges, fresh vegetables or crackers.  $5.99 lb.  Sold in pint containers.  (Vegan and Gluten Free)
